Hey friends! If you have followed my Instagram for some time, I’m sure you have seen several stories of my favorite go to health breakfast!
It’s so simple to make and can be made two ways – with butternut squash or sweet potatoes! I make mine per carbs I have planned for the rest of the day.
So now you are probably asking with all I put in it, right? It’s only a few things! Brussels sprouts, this one is butternut squash, one egg, garlic, and guacamole!
The first think I do is heat avocado oil in my cast iron pan. Then I cut my Brussels sprouts in half and put them in my skillet. I like my breakfast bowel crispy so I start on low to cook the middle, then crisp everything on high.
I put minced garlic in the Brussels sprouts right after I put them in. Once the Brussels sprouts are a bit cooked on the inside, I add the butternut squash (if I were using sweet potatoes, I would add them at the same time as the Brussels sprouts). Once everything is cooked, I turn the heat up and crisp them.
Last, I put the mixture into a bowl and fry an egg for the top! I like my eggs over medium. Then I add a scoop of Guacamole or some fresh avocado and enjoy! It’s really good with a big of sour cream as well. And that is it!!
